Vegan Energy Slice

We have been munching on this yummy slice all week. It's fantastic as a breakfast snack on the go or kids school lunches. 
- Low GI 
- No refined sugars
- Gluten free 
- Dairy free
- Fructose free (if you decide to not add the currants)
 

Ingredients: 

1/2 cup chia 

1/2 cup sesame seeds

1/2 cup sunflower seeds

1/2 cup pepita seeds

3 tablespoons of almond meal 

pinch of sea salt

1 tsp of cinnamon 

1/2 brown rice malt syrup 

1/4 cup extra virgin coconut oil

1/4 cup of boiling water

*optional - 1/2 cup of organic diced preservative free dried fruit. I used organic currants. 

 

 

Instructions: 

Melt together rice malt syrup + extra virgin coconut oil. When melted, take off heat and add 1 vanilla bean ( if you like) 

Add to dry mix and give it a good stir around. 

Add 1/4 cup of boiling water and stir. 

Place mixture on a flat tray, spread it out to about 1-2 cms thick. You can do this with the back of your spoon. 

Place in 180degree oven and cook for about 30-40mins until golden and crunchy on top and a little crispy on the sides. 

Let it cool, then slice which ever way you like.
